A visit to Little Water Cantina in Seattle’s Eastlake Union neighborhood should be high on your to-do list—if not for the great ambiance, excellent happy hour, and delicious offerings, then at least for a taste of their flavorful, tangy ceviche.  We promise you won’t regret it—and an added bonus will be your realization that this ceviche, while killer on its own, can also be beautifully matched with a Simple & Crisp Orange.

Overlooking the picturesque Lake Union, Little Water Cantina was the first LEED CI Platinum Candidate restaurant in Washington State, which (in addition to many other factors) means their water usage is cut by 70% and their energy use is halved.

On top of being a sustainable rock-star in the restaurant world, Little Water Cantina owners (and New York City transplants) Shannon and Laura Wilkinson and their dedicated crew are also creating downright delicious Mexican food with a distinctly Pacific Northwestern flair.  Their menu uses local and organic ingredients whenever possible to create innovative and modern versions of classic Mexican favorites.

Their Albacore Tuna Ceviche is made fresh using St. Jude’s tuna, jicama, mango, cured cactus, and a habanero vinaigrette.  Some of their other showstoppers include their vanilla bean, chile and cider-braised Carlton Farms pork Empanadas and their Wild Boar Torta Ahogada.

All of these dishes are best washed down with one of their expertly crafted cocktails.  Boasting an impressive array of libations and a drink menu that includes more than a dozen varieties of aged tequila, Little Water Cantina has been a popular happy hour hangout since it first opened its’ doors in May of 2011.
