Sometimes we get a little overwhelmed during the holidays because there are too many amazing treats we want to try—and we have a feeling we’re not alone with this dessert dilemma!  Feast your eyes on these Caramel Apple Pie Crisps, the perfect bite-size version of your favorite holiday pie.  You get to experience all the heavenly flavors of apple pie while saving room for all the other desserts too (like these unbelievable ganache, orange & peppermint meringue crisps!).

It’s so simple—here’s how:
  • Premade pie dough
  • Flour, for surface
  • 1 egg
  • 2 cups thinly sliced apples
  • 1 teaspoon lemon juice
  • 2/3 cup + ¼ cup sugar, separated
  • 2 tablespoons cornstarch
  • 1¼ teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/8 teaspoon nutmeg
  • ¾ cup water
  • Simple & Crisp Apple (12)
  • Caramel sauce
  • Whipped topping

Preheat over to 400 degrees.  Combine ¼ cup sugar and 1 teaspoon cinnamon in a small bowl and set aside.  Roll pie dough ¼” thick on a lightly floured surface, cut into a dozen 1½” rounds.  Whisk egg in a small bowl, add a splash of water, and set aside.  Place on a baking sheet and set into freezer until completely frozen.  Using a pastry brush, spread a thin layer of the egg wash over each round.  Sprinkle cinnamon sugar mixture over each crust.  Bake for 8-10 minutes until lightly golden.  Set on a cooling rack to cool completely.

Pour water in a medium saucepan over medium heat.  In a small bowl, toss apples and lemon juice, then set aside.  Combine sugar, cornstarch, cinnamon, salt, and nutmeg.  Add to the water and stir well, bring to a boil.  Boil for 2 minutes and stir constantly.  Add the apples and bring mixture back to a boil.  Reduce to a simmer and cook until apples are tender, about 6-8 minutes.  Remove from heat and allow apples to cool.

Drizzle a small scoop of caramel sauce on top of Simple & Crisp Apple.  Top with 1 tablespoon of apple mixture.  Place a small pie crust over apple filling and top with whipped topping.

The perfect pairing—Happy Holidays!
