orange salmon burger bite and asian slaw: summer bbq essentials

Kelly of Be Well by Kelly reinterprets the all time BBQ favorite into gluten-free deliciousness in a salmon burger bite!

It’s so simple – here’s how:
  • Simple & Crisp Orange
  • 1/2 cup chopped walnuts
  • 1 cups shredded organic red cabbage
  • ½ cup shredded organic green cabbage
  • ½ cup shredded carrots
  • 1/4 cup chopped organic scallions (green part only)
  • 2 tablespoons freshly chopped organic cilantro
  • 1/4 cup rice vinegar
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon soy sauce
  • 1 tablespoon of lime juice
  • 1 teaspoon of organicville gluten free sriracha (optional for spice lovers)
  • 1 avocado cubed
  • Two tablespoons oil

In a large bowl whisk vinegar, sesame oil, soy sauce and lime juice together. Add cabbage, carrots, green onion and cilantro to the dressing and mix to coat.

Using a sharp knife, remove the skin and cut the salmon into 1-inch pieces. Transfer the salmon to the bowl of a food processor and pulse until the fish is finely chopped. Transfer to a mixing bowl and add egg, scallions, flax, garlic and ginger.  Portion out salmon into bite size sliders, seasoning both sides with kosher salt.

Heat a large skillet over medium-high heat and add 2 tablespoons of oil. Add the burgers to the skillet and cook, turning once, until golden brown on both sides and the salmon is just cooked through, about two minutes per side.  Stack each salmon burger on an orange crisp with a tablespoon of slaw, one burger, and a cubed avocado.
