bite-sized pomegranate salad on blood orange: perfect pairing

Combining pomegranate seeds, walnuts, and brie makes for a delightful bite-sized appetizer salad when served atop a blood orange crisp.

Salad CrispInspired by Martha’s Stewart’s Blood Orange recipes, we decided to take on the challenge of creating something new with our Blood Orange Crisps. Using some of our favorite ingredients, we came up with the idea of taking a seasonal favorite – mainly, brie and pomegranate salad – and serving it on top of Simple & Crisp Blood Oranges. This treat is sure to be a hit amongst your friends as a healthy snack.

It’s so simple—here’s how:

Salad Crisp 1

 

For the dressing:
  • 1 tbsp vinegar/balsamic
  • 1 tbsp olive oil
  • ½ tbsp Dijon mustard
  • ½ tbsp honey
  • 1/4 tea spoon salt
  • 1/4 tea spoon pepper

Mix the lettuce and dressing in a bowl. Once done, transfer one or two table tablespoons’ worth of pomegranate salad to each blood orange crisp. Garnish the salad with pomegranate seeds, walnuts, and a slice of brie. When you are finished making your intended number of salad crisps, serve and enjoy!
